Cattlemen’s history is one of high risks and epic beginnings. The year was 1945, and the restaurant was then owned by Hank Frey, an avid gambler. In a smoke-filled room at the old Biltmore Hotel in downtown Oklahoma City, Frey was out of his luck and running low on money. Also at the dice game was a local rancher, Mr. Gene Wade. Frey, tryin’ to recoup his lost money, put up a bet that would go down in Oklahoma lore: if Mr. Wade could roll a hard six, known as two threes, he could win the restaurant. Mr. Wade put up his entire life savings, and with one roll of the dice, he was now the owner of Cattlemen’s. This story is not only a fun piece of folklore that visitors and staff love, but it also sparked the transformation of Cattlemen’s from a simple café into the iconic hall of fame steakhouse we know today. It fits right into Cattlemen’s Western culture and history of a spirit of risk, reward, and true grit.

Expansion from Local Diner to Legendary Steakhouse
